Irish St Patricks Day Drop Cookies

St. Patrick's Day drop cookies are a lovely sweet treat.
Ingredients:
2 eggs
3/4 cup granulated sugar
2/3 cup vegetable oil - i have also used melted butter
2 tbsp. plain or vanilla yogurt
2 teaspoons vanilla extract or instead of vanilla, cream de menthe then omit the green food colouring.
a quick spot of green food colouring
1 teaspoon lemon peel, grated
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
additional sugar or coloured sugar
Directions:
1. In a large bowl, beat the eggs, sugar, vegetable oil or melted butter, yogurt, vanilla and lemon peel until blended. This is when I like to add a tiny drop of green food colouring.
2. Combine the flour, baking powder and salt then gradually beat into egg mixture.
3. Drop by rounded teaspoonfuls 2 inches apart onto greased baking sheets.
4. Flatten with a glass dipped in sugar.
5. Bake at 350 degrees for 8-10 minutes or until edges are lightly browned.
6. Cool for 2 minutes before removing to wire racks to cool completely.
