Irish St Patricks Day Drop Cookies |

St. Patrick's Day drop cookies are a lovely sweet treat. Ingredients:
2 eggs |
3/4 cup granulated sugar |
2/3 cup vegetable oil - i have also used melted butter |
2 tbsp. plain or vanilla yogurt |
2 teaspoons vanilla extract or instead of vanilla, cream de menthe then omit the green food colouring. |
a quick spot of green food colouring |
1 teaspoon lemon peel, grated |
2 cups all-purpose flour |
2 teaspoons baking powder |
1/2 teaspoon salt |
additional sugar or coloured sugar |
Directions:
1. In a large bowl, beat the eggs, sugar, vegetable oil or melted butter, yogurt, vanilla and lemon peel until blended. This is when I like to add a tiny drop of green food colouring. 2. Combine the flour, baking powder and salt then gradually beat into egg mixture. 3. Drop by rounded teaspoonfuls 2 inches apart onto greased baking sheets. 4. Flatten with a glass dipped in sugar. 5. Bake at 350 degrees for 8-10 minutes or until edges are lightly browned. 6. Cool for 2 minutes before removing to wire racks to cool completely. 7. Makes about 34 |
