Irish Soda Bread with Raisins |

A favorite St. Patrick's Day recipe, classic Irish soda bread is leavened with baking soda and some type of acidic ingredient, usually buttermilk. Raisins add sweetness to this hearty bread. Ingredients:
2 1/4 cups all-purpose flour |
1/4 cup sugar |
1 1/2 teaspoons baking powder |
1/2 teaspoon baking soda |
1 teaspoon salt |
3 tablespoons butter, chilled and cut into small pieces |
3/4 cup raisins |
1 cup low-fat buttermilk |

Directions:
1. Preheat oven to 350°. 2. Lightly spoon flour into dry measuring cups; level with a knife. Combine flour and next 4 ingredients in a large bowl; cut in butter with a pastry blender or 2 knives until mixture resembles coarse meal. Stir in raisins. Add buttermilk; stir with a fork just until moist. 3. Turn dough out onto a lightly floured surface; knead 3 or 4 times. 4. Press dough into an 8-inch round pan coated with cooking spray. 5. Bake at 350° for 30 minutes or until lightly browned. Cool in pan 10 minutes. Cut into 12 wedges. |
