These little muffins have the same terrific flavor as the bread with buttermilk,caraway seeds and currents. Just in time for St. Pat's Day Ingredients:
2-1/4 c flour |
1/2 c plus 1 tbs sugar,divided |
2 tsp baking powder |
1/2 tsp salt |
1/4 tsp baking soda |
1 tsp caraway seeds |
1 egg |
1 c buttermilk |
1/4 c butter ,melted |
1/4 c vegetable oil |
3/4 c dried currants or raisins |
Directions:
1. In a large bowl,combine flour ,1/2 c sugar,baking powder,salt,baking soda,and caraway seeds.. In another bowl,beat the eggs,buttermilk,butter and oil. Stir into dry ingredients just till moistened. Fold in currants. 2. Fill greased muffin cups three-fourths full. sprinkle with remaining sugar. Bake at 400 for 15 mins. or till toothpick comes out clean. Cool 5 mins before removing from pan to wire rack. Serve warm. |
