Irish Soda Bread Gluten Free

Here's a wonderful gluten-free version of Irish soda bread just in time to celebrate St. Paddy's Day on Tuesday. The orange zest makes it just perfect! I adapted a recipe from Living Without to the flavors my old Irish Soda Bread recipe used to be.
Ingredients:
2 c. high-protein, gluten-free flour mix - see note below
1 t. baking soda
2 t. baking powder
1/2 t. xanthan gum
1/2 t. salt
1/4 c. gluten-free oats
1 egg
1 c. buttermilk
1 t. orange zest
1/3 c. golden raisins
1 t. sugar
additional sugar
Directions:
1. Preheat oven to 375. Lightly dust a cookie sheet with gluten-free flour.
2. Mix flour blend, baking soda, baking powder, xanthan gum, salt, oats, orange zest, raisins, and 1 T. sugar in bowl.
3. Add egg and buttermilk and mix to form a soft, sticky dough.
4. Place dough on a lightly floured (gluten-free) surface and kneed three times.
5. Shape dough into a 6 flat round. Plce on prepared cookie sheet. Sprinkle with gluten-free flour and score a large X on the top. Sprinkle with additional sugar.
6. Bake in preheated oven until top is golden brown, about 30-35 minutes or until it sounds hollow.

8. Living Well's High-protein gluten-free flour
9. 1 1/4 c. bean, chickpea or soy flour (I used soy)
10. 1 c. arrowroot starch, cornstarch or potato starch (I used half cornstarch and half potato starch)
11. 1 c. tapioca starch
12. 1 c. white or brown rice flour (I used white)
13. Blend ingredients together. Store in overed container in the refrigerator until used.
