Irish Soda Bread Gluten Free |

Here's a wonderful gluten-free version of Irish soda bread just in time to celebrate St. Paddy's Day on Tuesday. The orange zest makes it just perfect! I adapted a recipe from Living Without to the flavors my old Irish Soda Bread recipe used to be. Ingredients:
2 c. high-protein, gluten-free flour mix - see note below |
1 t. baking soda |
2 t. baking powder |
1/2 t. xanthan gum |
1/2 t. salt |
1/4 c. gluten-free oats |
1 egg |
1 c. buttermilk |
1 t. orange zest |
1/3 c. golden raisins |
1 t. sugar |
additional sugar |
Directions:
1. Preheat oven to 375. Lightly dust a cookie sheet with gluten-free flour. 2. Mix flour blend, baking soda, baking powder, xanthan gum, salt, oats, orange zest, raisins, and 1 T. sugar in bowl. 3. Add egg and buttermilk and mix to form a soft, sticky dough. 4. Place dough on a lightly floured (gluten-free) surface and kneed three times. 5. Shape dough into a 6 flat round. Plce on prepared cookie sheet. Sprinkle with gluten-free flour and score a large X on the top. Sprinkle with additional sugar. 6. Bake in preheated oven until top is golden brown, about 30-35 minutes or until it sounds hollow. 7. NOTE: 8. Living Well's High-protein gluten-free flour 9. 1 1/4 c. bean, chickpea or soy flour (I used soy) 10. 1 c. arrowroot starch, cornstarch or potato starch (I used half cornstarch and half potato starch) 11. 1 c. tapioca starch 12. 1 c. white or brown rice flour (I used white) 13. Blend ingredients together. Store in overed container in the refrigerator until used. |
