I invited several vegetarians to my traditional St. Patrick's Day feast this year and I wanted to something to offer them other than vegetables. I looked at a lot of Irish Soda Bread recipes before I came up with this. Read more . I couldn't believe how easy it was to make and everyone loved it. Ingredients:
1 1/2 cups unbleached white flour |
1 1/2 cups barley flour |
1 1/2 teaspoons baking soda |
1 teaspoon salt |
3 tablespoons sugar |
1 1/2 cups buttermilk |
optional: 1/2 cup currants or raisins |
Directions:
1. Preheat oven to 375 degrees. Put all dry ingredients in bowl of stand mixer or large mixing bowl. Attach dough hook to stand or hand held mixer. Turn to low and slowly add buttermilk. Once all flour is incorporated add dried fruit if desired. Place a sheet of parchment on a baking sheet. Use spatula to scrap dough out of bowl and on to parchment. Form in to round. Cut cross into top of bread. Bake for about 40 minutes until toothpick comes out clean. Bread will be dark brown and sound hollow when tapped. |
