This bread is just how mom made for us to go with our stew on a cold winter day. Something to warm us after a walk home from school (probably in the rain). Ingredients:
1lb/450g coarse wholemeal flour |
6oz/175g plain white flour |
1 rounded tsp bread soda |
1 tsp salt |
3/4 pint/450 mls buttermilk (approx) |
Directions:
1. Preheat oven 200 C/ 400 F. 2. Mix dry ingredients. 3. Stir in enough buttermilk to make a fairly soft dough. 4. Turn onto worksurface dusted with wholemeal flour, kneed lightly. 5. Shape into a circular cake and make a cross on the top with a knife. 6. Bake for approx 45 mins until bread is brown on top and sounds hollow when tapped on base. 7. Cool on wire rack. Wrap in towel to keep the crust soft. |
