The best soda bread recipe I've found. Plump the raisins in a good Irish whiskey like Bushmill.This bread is moist yet tender and at the same time hearty with or without butter. Ingredients:
4 cups flour |
1/4 cup sugar |
1 tsp. baking soda |
2 tsp. baking powder |
1 tsp. salt |
2 large eggs |
1 1/4 cups buttermilk |
1/4 cup oil |
2 tsp. caraway seeds |
1 cup golden raisins (plumped in irish wiskey) |
1 tbl. milk (brush on before baking) |
Directions:
1. Pre-heat oven to 350 2. Line a cookie sheet with parchment or lightly grease it 3. In a large bowl, stir the flour, sugar, baking soda, baking powder and salt together 4. In a separate bowl, beat eggs, buttermilk, and oil together 5. Make a well in center of dry ingredients and pour in buttermilk mixture. 6. Add caraway seeds and drained raisins. Stir until a soft dough forms 7. Shape dough into large ball on a lightly floured board (flour hands for easier handling. 8. With a sharp knife, make a cross on the top. 9. Place on prepared pan, brush with milk. 10. Bake until golden brown, 30 to 40 minutes. |
