I am not sure if this is an authentic Irish recipe but these scones sure are flakey and oh so good. Ingredients:
4c all purpose flour |
1/4c sugar |
2t baking powder |
1/2tsp salt |
1c shortening |
1c rasins or currents |
2 eggs, beaten |
1c cream (10%) |
melted butter and sugar |
Directions:
1. Sift all dry ingredients into a large bowl 2. Cut in the shortening until crumbly. 3. Stir in the currants or rasins. 4. Mix the beaten eggs and cream together. Pour over flour mixture and mix with a fork until dough holds together (do not over mix) 5. Knead dough on a floured surface 10-15 times. 6. Divide dough into 8 pieces; form each into a flat circle. 7. Score with a knife into pie shaped wedges. 8. Place on lined baking sheets; brush with some melted butter and sprinkle with sugar. 9. Bake at 425F 15-20 mins. |
