Irish Sausage and Bacon Stew |

In Ireland, this dish is called a coddle. The ingredients are basic but the end result is a meal that will warm you and fill you from head to toe. Ingredients:
4 medium onions, finely chopped |
8 medium potatoes, peeled and cut into chunks |
1 vegetable stock cube |
8 -12 slices streaky bacon |
1 lb sausage |
2 1/2 cups water |
1 cup frozen peas |
1/4 cup butter |
parsley |
salt and pepper |
Directions:
1. Place the onions and potatoes in a large saucepan. 2. Cut the bacon into pieces and add it too. 3. Season with salt and pepper. 4. Add the cold water and lay the sausages on top. 5. Place the pan over a high heat and bring to a boil. 6. Dissolve the stock cube in the water. 7. Lower the heat once it comes to a boil, taking the water down to a simmer. 8. Cover and cook for 20 minutes. 9. Remove the lid, increase the heat and boil for 10 minutes. 10. Add in the frozen peas, parsley and any more salt and pepper, if needed. 11. Serve in soup bowls, with a knob of butter on top if you like to make the sauce richer and mash into the potatoes as you're eating. |
