Irish Potato Pancakes - Boxty |

This is one of my family favourite recipes for Irish Potato Pancakes. These are made all year round but traditionally served on Celtic New Year. They are known as Boxty. Ingredients:

1 lb. of potatoes, grated |
3-3/4 cups all-purpose flour |
1 cup milk, preferrably 2% or homogenized |
2 tablespoons warm water |
1 teaspoon baking soda |
2 tablespoons butter or margarine |
1 cup mashed potatoes |
salt and pepper to taste |
note: i always make these when there are leftover mashed potatoes. by doing so it cuts down on prep time. |
Directions:
1. Soak grated potatoes overnight in cold water to remove 2. the starch. 3. Mix all ingredients together EXCEPT the flour. 4. Mix All-purpose flour in a little at a time with a wooden 5. spoon or your hands. 6. Add extra milk if it seems too stiff. 7. Lightly grease an iron skillet or griddle. 8. Drop the mixture onto the skillet by rounded teaspoons. 9. Brown the bottom slightly, then flatten the tops a little 10. bit with a spatula. 11. Depending on what you prefer they can be thick or thinner and crispy. 12. Cook until golden brown. Served with butter or sour cream. 13. Note: Herbs such as parsley can be added. |
