1/2 c (about 1 small to medium potato). mashed potatoes
2 1/4 c. confectioner's sugar
1-12 oz. jar peanut butter
Directions:
1. Place potatoes in mixer bowl. 2. Add sugar a little bit at a time beating well after each addition. 3. Spread onto a big piece of waxed paper about 12 x18 and make a rectangle about 10 x15 . 4. Spread peanut butter over top of sugar potato mixture. 5. Roll up like as a jelly roll. 6. Put in fridge for about an hour then cut into slices. 7. Store in fridge.
