Irish Potato Cakes

A tasty easy snack or side. Tastes great with butter.
Ingredients:
450g well mashed cooked potato
50g butter (or low fat spread) plus a little extra to serve
50g wholemeal flour
Directions:
1. Prepare your mashed potato by boiling potatos until soft and mashing until there are no more lumps remaining.
2. Beat the potato well then beat in the butter (or low fat spread), the flour and a pinch of salt.
3. Turn out onto a lightly floured surface and pat out to a round about 1cm thick.
4. Cut into rounds with a 3 inch biscuit cutter, reknead the trimmings and repeat.
5. Cook the potato cakes in a non stick frying pan for about 3 mins on each side until golden brown.
6. Serve with butter (or low fat spread)
