Irish Oven Apple Oats

This is a yummy, great start to your day!
Ingredients:
3 1/2 cups 2% low-fat milk or 3 1/2 cups whole milk
1 cup irish steel cut oats
2 teaspoons pure maple syrup
1/2 teaspoon freshly grated nutmeg
1 -1 1/2 cup peel diced apple
2/3 cup currants or 2/3 cup raisins, to taste
1/2 teaspoon salt
Directions:
1. Heat oven to 375°F.
2. Heat the milk in a saucepan on medium heat, stirring occasionally, almost to a boil.
3. Stir in the oats, maple syrup, nutmeg and apples.
4. Cook just until the mixture boils, about 2 minutes.
5. Remove from the heat; stir in the currants (or raisins), and salt.
6. Spoon the oatmeal mixture into a 1 1/2 qt casserole dish.
7. Cover; bake until all of the liquid is absorbed and the oatmeal is creamy, about 25 minutes.
8. Stir well.
9. Spoon into bowls and enjoy.
