Irish Mashed Potatoes (Colcannon) |

Not your regular mashed potatoes. These are traditional Irish spuds! Ingredients:
6 -8 potatoes, peeled and cubed |
1 tablespoon butter |
1 cup onion, chopped |
2 cups kale, chopped |
1/2 cup milk |
1/3 cup sour cream |
1/2 teaspoon salt |
1/4 teaspoon pepper |
Directions:
1. Cook potatoes in water until tender. 2. Drain. 3. While potatoes are cooking; Melt butter in large skillet. 4. Add chopped onion and cook for 5 minutes. 5. Stir in kale and cook 5 more minutes. 6. Remove from heat. 7. Mash potatoes, milk, sour cream, salt and pepper with mixer. 8. Stir in kale mixture. |
