A savory potao and herb scone that is fried not baked. Ingredients:
1/2 pound mealy potatoes |
4 tablespoons flour |
1/4 teaspoon salt |
4 tablespoons oil |
2 tablespoons chopped parsley |
1/2 teaspoon dried dill |
1/4 teaspoon savory |
1/4 teaspoon marjoram |
1/4 teaspoon powdered sage |
oil for frying |
Directions:
1. 1.Boil or bake the potatoes, then pass through a foodmill. 2. 2.Mix the flour, salt, oil & herbs with the potatoes. 3. 3.On a floured board, roll this dough to a thickness of about 1/4 inch. 4. 4.Cut into triangles 3 or 4 inches wide. 5. 5.Fry in very hot oil on both sides until light golden. |
