In Ireland, this is the true soda bread - dark, not very sweet, and an everyday staple served with a tangy cheese, smoked salmon or some eggs. From The Onion Skin, March 2009. whole wheat pastry flour, all-purpose white flour, toasted wheat germ, baking soda, salt, buttermilk or plain yogurt, molasses cvt Ingredients:
3 cups whole wheat pastry flour |
1 cup all-purpose flour |
1/3 cup toasted wheat germ |
1 (scant) tsp baking soda |
1 tsp salt |
2 cups lowfat buttermilk or plain yogurt |
2 tbsp molasses |
Directions:
1. Preheat oven to 425 degrees. 2. Lightly grease a baking sheet or line with parchment paper. In a large bowl, stir together whole wheat flour, white flour, toasted wheat germ, baking soda and salt. Gently mix in the buttermilk (or yogurt) and molasses until a soft dough is formed. Knead very lightly. 3. Divide dough into 2 pieces: form into rounded flat loaves. Mark each loaf with an x and place on prepared baking sheets. Bake in preheated oven until golden brown, about 40-45 minutes. Allow loaves to cool before slicing into six wedges each. |
