1/2 cup raisins |
1/2 cup irish whiskey |
5 eggs |
2 cups heavy cream |
1 cup sugar |
1/2 tsp vanilla |
1/4 tsp nutmeg |
8 to 9 slices firm white bread |
4 tbs butter softened |
sauce |
1 stick butter |
1 cup sugar |
6 tbs heavy cream |
1/4 cup irish whiskey |
Directions:
1. Pudding: 2. Soak raisins in whiskey for 1 hour. 3. Butter a 9 inch non metal baking dish. In bowl blend: eggs, cream, sugar, vanilla and spices. 4. Butter one side of bread with softened butter. 5. Cut slices diagonally. Arrange 1/2 bread in dish overlapping pieces. 6. Drains raisins and sprinkle 1/2 over bread. 7. Repeat with remaining bread and raisins. 8. Pour over custard and soak for 30 minutes. 9. Then place dish in a water bath and bake 400F for an hour or top is golden and set. 10. Remove dish from water bath and cool on rack. 11. Make sauce: 12. Melt butter in saucepan, whisk in sugar and cream and whiskey . 13. Simmer low until sauce thickens. 14. Pour sauce over individual pudding portions |
