Potatoe pancakes is the easiest way to describe boxty. Very popular at barbeques and simple to make. Great if you have left over mashed potatoes Ingredients:
2 raw potatoes |
4 mashed potatoes |
1/2 c. plain flour |
1 c. chopped green onions --or-- 1 minced onion |
1 egg |
2 tsp. garlic powder (optional) |
salt + pepper to taste |
Directions:
1. Grate the raw potatoes and miz well with the mashed potatoes. 2. Add the salt, pepper, garlic and flour. 3. Slightly beat the egg and add it to the mixture. 4. Add green onions (or regular onion). 5. Add as much milk as you need to make the mixture the same tickness as pancake batter. 6. The size you want to make the patties is up to you. I make mine slightly smaller than a pancake. 7. Cook over moderate heat for 3-4 minutes on each side or until they are lightly browned 8. *****To make it more 'breakfast friendly' add pieces of cooked bacon to the batter***** |
