Enchiladas
Ingredients:
3 ounces chicken breast
2 slices of onions
1/2 cup enchilada sauce
10 corn tortillas
5 tbsps corn oil
Directions:
1. Boil chicken breast. Season to taste. Shred chicken and set aside.
2. Heat corn oil until hot. Fry each tortillas until crispy. Drain of excess oil on paper towels.
3. In a seperate sauce pan heat enchilada sauce. Dip firied tortillas in the enchilada sauce one by one until they are covered in sauce and set aside.
4. Place amount of chicken desired across each tortilla and roll.
5. Garnish with onions and sour cream if you desire.
