Ingredients:
5 ounces milk |
8 ounces spring onions, sliced or 8 ounces chives |
1 -1 1/2 lb mashed potatoes, made without cream or butter |
salt and pepper |
1 pinch nutmeg |
4 ounces unsalted butter |
Directions:
1. Bring the milk to a simmer with the spring onions. 2. Add this to the mashed potatoes and season with salt and pepper. 3. Add half the butter and a pinch of nutmeg and beat well. 4. Spoon the potatoes into a bowl and make a well in the middle. 5. Put the remaining butter in the well and serve. |
