This is a quick and easy dessert that can be made anytime and with any other fruit combinations that you or your kids can dream up. If you keep fruit in your freezer, you're always good to go!! Ingredients:
3 peaches, ripe but firm (peeled, pitted and sliced,about 2 cups) |
1/2 cup raspberries |
1/2 cup granulated sugar |
1/2 cup water |
1 strip lemon rind |
Directions:
1. Freeze peach slices and raspberries in a single layer for at least 2 hours or until solid. Store in freezer bags or air-tight containers. 2. SIMPLE SYRUP: In a small saucepan, bring sugar and water and lemon rind to a boil, stirring to dissolve sugar. Boil for 1 minute. Let cool completely and remove rind. 3. In a food processor, process frozen fruit, pouring syrup in slowly, until smooth, 2-3 minutes. 4. Serve immediately, or store in freezer. |
