Inspired by ingredients I had on hand, I made and totally enjoyed this chili. While I used dried black beans, you can of course use others - a blend of northern, kidney, and black beans for example. I used organic ingredients, better for the environment and for us. I used a crock pot and so did not pre-cook the beans. If you cook this on the stove top, either use canned beans or pre cook the dried beans. Ingredients:
1 lb ground turkey breast |
1 cup dried black beans, soaked for at least 3 hrs and rinsed |
1 medium onion, chopped |
2 garlic cloves, minced |
4 dried mild chile peppers |
8 ounces frozen corn kernels |
1 (14 ounce) can diced tomatoes |
1/4 cup merlot |
1/4 cup water |
1 teaspoon mexican seasoning |
1 teaspoon turmeric |
salt and pepper |
Directions:
1. Mix everything in crockpot. When adding the tomatoes, include the liquid. Stir well so all ingredients are blended. 2. Cook on low for 6-8 hours. |
