A recipe from my niece who lives in Milan. A favorite of Italians to bring to the beach during the summer. I've tried this too and it's good! Ingredients:
fussili pasta (spiral) |
dried tomatoes, jullienned |
green olives, sliced in half |
capers (optional) |
roasted bell pepper, diced |
smoked pancetta or any local ham, diced |
feta cheese |
extra-virgin olive oil |
salt & pepper to taste |
*no real proportions - just throw in the bowl to make a salad. |
Directions:
1. Cook the pasta, drain and run cold water over it. 2. Mix all the ingredients then put in the fridge for about an hour before serving. |
