Viva Italia! (Italy lives!) This is my all-time favorite salad. It tastes like summer and reminds me of my trip to Italy (so long ago). Insalata Caprese means 'Salad in the style of Capri'. (Eat, eat!) Ingredients:
fresh mozzarella cheese (very soft; sometimes packed in water), sliced about 3/16 - 1/4 inch thick |
fresh roma tomatoes, sliced as above |
fresh basil |
fresh cracked black pepper |
sea salt |
extra-virgin olive oil |
Directions:
1. *This recipe can make however much you'd like. Plan on about two slices cheese/tomato for a side dish/appetizer or 3 - 4 slices for a light lunch. 2. - 3. On a serving platter, layer one slice tomato, followed by two basil leaves, then one slice mozzarella. Repeat layers as many times as you need. 4. Add a couple grinds of black pepper over the top of the salad, follow with a light sprinkling of sea salt. Drizzle a small amount of extra-virgin olive oil over all. Serve immediately. |
