This classic Italian salad is extremely easy to make. To ensure good flavor, get the best and freshest ingredients you can. (I'm fortunate enough to have a basil plant, whose wonderful aroma more than compensates for shortcomings in the tomatoes this time of year. Read more .) Serve with crusty bread to soak up the juices! Ingredients:
8 oz ball of fresh mozzarella |
2 ripe medium tomatoes |
1/4 c basil leaves (packed) |
3 tbsp olive oil |
1 tbsp balsamic vinegar |
salt and freshly ground pepper to taste |
Directions:
1. Slice the mozzarella and tomatoes 1/8 -1/4 thick. 2. On a plate, alternate layers of mozzarella and tomato to form a circle. 3. With a pair of scissors, cut basil into shreds. Scatter the shreds over the plate. 4. Drizzle the plate with olive oil and vinegar. 5. Season with salt and pepper. |
