This is the best apple cake my mom used to make with the apples from our backyard. This is a very forgiving recipe. It can take a variety of apples and a range of quantities. It is quick and delicious.
Ingredients:
3 -5 cups apples, peeled and diced
1 teaspoon cinnamon
1/4 cup brown sugar
1 3/4 cups flour
1 1/4 cups sugar (white or brown)
2 1/2 teaspoons baking powder
1 teaspoon salt
1/3 cup butter (soft)
2/3 cup milk
1 egg
1/3 cup milk
1 teaspoon vanilla
Directions:
1. Preheat oven at 375°F.
2. Layer apples in a greased pan (9x13).
3. Combine flour, sugar, baking powder, and salt in a bowl.
4. Mix soft butter and milk. Add to dry ingredients. Combine well.
5. Mix egg, milk and vanilla. Add to batter mixture and combine well.
6. Pour batter over apples.
7. Bake for 25 minutes.
