Something I saw in today's paper that seems delicious, and great any time of the year. Ingredients:
12 boneless skinless chicken thighs |
6 garlic cloves, pressed, and chopped |
1 1/2 tablespoons fresh ginger, grated |
1 tablespoon sesame oil |
3 tablespoons soy sauce |
1/2 teaspoon cayenne pepper |
1/2 cup peanut butter (smooth, or chunky) |
Directions:
1. Place the chicken thighs on the bottom of a slow cooker. 2. Sprinkle with garlic, ginger, sesame oil, soy sauce, and cayenne pepper. 3. Cover, and cook on low for 8 hours or until a meat thermometer reaches 180 degrees Fahrenheit. 4. With a slotted spoon remove chicken pieces from slow cooker. 5. Stir peanut butter into remaining juices. 6. If the sauce is thicker than you like, stir in 1/4 to 1/3 cup of water. 7. Spoon peanut butter sauce over chicken to serve. |
