Indonesian Fried Banana Fritters |

These fritters can be eaten as they are or for dessert with ice cream (chocolate sauce goes well on top) Ingredients:
6 small half-ripe bananas |
batter |
1/2 cup all-purpose flour |
2 tbsp. cornstarch |
1/4 cup granulated sugar |
1/4 tsp. salt |
1/2 cup water |
Directions:
1. Peel the bananas and cut cross-wise into 3 inch lengths-set aside. 2. To make the batter; in a bowl sift together the flour, cornstarch, granulated sugar and salt. Gradually add the water, stirring constantly, until the batter is smooth and thick enough to lightly coat the back of a spoon. Set aside. 3. Heat 1 1/2 inches of oil in a wok or deep saucepan to 375ºF on a deep-fryer thermometer. (I use a large electric frying pan). 4. Add the bananas to the batter. Using tongs, lift out banana pieces, one at a time and allow the excess batter to drip off into the bowl, and carefully lower into the hot oil. Do not overcrowd the pan; allow the pieces to float freely. Deep-fry, turning often, until golden brown, about 2 minutes. Transfer to paper towels to drain. Repeat with remaining pieces. 5. Arrange the bananas on a warmed platter and dust with confectioners' sugar and cinnamon. Serve hot. |
