INDONESIAN COCONUT RICE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Howard Estate in Mesquite, Texas in 1983. Ingredients:
1-1/2 cups long grain rice |
2-1/2 cups coconut milk |
1/2 teaspoon salt |
2 bay leaves |
Directions:
1. In heavy pan bring rice, milk, salt and bay leaves to boil. 2. Cover and simmer 20 minutes then remove from heat and let stand covered 10 minutes. 3. Right before serving fluff with a fork. |
