Ingredients:
1/4 cup hot chicken broth |
1 teaspoon dark corn syrup |
2 tablespoons soya sauce |
3 tablespoons oil |
4 chicken breast halves (diced) |
1 small onion, chopped |
1 small red pepper, chopped |
1 teaspoon ginger, ground |
1 teaspoon crushed red pepper powder |
2 teaspoons curry powder |
3 cups cold cooked rice |
1/2 cup chopped peanuts |
1/2 cup scallion, minced |
1/4 cup parsley, minced |
Directions:
1. Mix broth, corn syrup and soya sauce. 2. Stir fry chicken in hot oil. 3. Add onion, red pepper, ginger and crushed red pepper. 4. Cook for 30 seconds. 5. Stir in curry powder and rice. 6. Cook for 2-3 minutes. 7. Add liquids. 8. Stir in peanuts, scallions and parsley. 9. Serve hot! |
