Ingredients:
1 whole chicken, about 3 lbs |
1 can coconut milk |
1 teaspoon lemon, rind of, grated |
1 tablespoon lime juice |
1 teaspoon salt |
4 cloves garlic |
3 red chilies |
1 piece ginger |
14 almonds |
1 teaspoon pepper |
1 teaspoon shrimp paste |
Directions:
1. Wash and cut up chicken. 2. Broil for 10 minutes until golden brown. 3. Pound spices until fine. Simmer coconut milk with spices and put in lime juice and rinds. 4. Pour over chicken and broil for another 20 minutes or until tender. 5. Baste frequently with gravy. |
