Individual Sweet Potato Casserole |

Serve with Baked Ham or Roasted Turkey and Green Bean Casserole. This came from North Carolina Sweet Potato Commission. I have not tried this just posting for safe keeping. Ingredients:
3 lbs medium sweet potatoes |
2/3 cup firmly packed light brown sugar, plus 2 tbl packed brown sugar |
3 tablespoons butter, softened |
1/2 teaspoon ground cinnamon |
1/2 teaspoon ground nutmeg |
1/4 teaspoon salt |
1 cup milk |
Directions:
1. In large saucepan cook sweet potatoes in boiling salted water to cover. Simmer until tender, about 15 minutes; drain. Peel sweet potatoes and mash. 2. Stir in 2/3 cups brown sugar, butter, cinnamon, nutmeg and salt; mix well. Blend in milk. 3. Pour seasoned sweet potato mixture into buttered 1 1/2-quart casserole dish or buttered individual bakers. Sprinkle with remaining 2 tablespoons brown sugar. Bake in center of oven at 400, for 30 minutes or until heated through. |
