INDIVIDUAL RED PEPPER AND HAVARTI FRITTATAS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Redman Estate in Heath, Texas in 1989. Ingredients:
1 cup roasted red bell peppers chopped |
8 eggs |
1/4 cup heavy cream |
1/4 cup milk |
1/4 teaspoon salt |
1/8 teaspoon pepper |
1/8 teaspoon ground nutmeg |
1 cup shredded havarti cheese |
1/4 cup grated parmesan cheese |
Directions:
1. Spread red peppers in four well greased individual au gratin dishes. 2. Sprinkle grated cheese on top. 3. Beat eggs with milk, cream, salt, pepper and nutmeg. 4. Pour mixture over red peppers and cheese then top with parmesan. 5. Bake at 350 until frittata is puffy and lightly browned about 20 minutes then serve immediately. |
