If frozen fruit is used, allow to though and pat dry. Ingredients:
3/4 c sugar |
1/4 c blanched almonds |
1/4 tsp salt |
4 tbsp butter |
2 large eggs |
1 tsp almond extract |
1/2 c flour |
1/2 tsp baking powder |
1 1/2 c raspberries |
Directions:
1. Heat oven to 375 degrees. 2. Lightly grease six 6-ounce ramekins and place on a rimmed baking sheet. 3. Process sugar, almonds and salt in a food processor until lightly ground, 10-15 seconds. 4. Add butter, eggs and almond extract and process until smooth, about 5 seconds. 5. Add flour and baking powder and pulse until just incorporated, about 5 pulses. 6. Divide the batter among the ramekins. 7. Sprinkle berries over the batter. 8. Bake 25 to 30 minutes. |
