Individual Orange Cakes

Fresh orange cakes. Perfect for springtime deserts.
Ingredients:
1 tablespoon unsalted butter
2/3 cup superfine sugar
2 egg yolks
3 egg whites
2/3 cup reduced fat buttermilk
3 tablespoons fresh orange juice
2 tablespoon orange zest
1/4 cup all-purpose flour
1/4 teaspoon salt
Directions:
1. Preheat oven to 325 degrees
2. Butter and lightly sugar 4 ramekins (about 1-cup size).
3. In a mixer, add egg yolks, buttermilk, orange juice and zest and beat until well combined.
4. Reduce the speed to low and sift in flour, sugar and salt.
5. Continue to mix until combined.
6. Beat egg whites until you get stiff peaks.
7. Combine the 2 mixtures by gently folding them together.
8. Divide mixture evenly between ramekins, then set ramekins in a roasting tray and fill with water halfway up the sides of the ramekins.
9. Bake for 60 minutes until the top springs back when gently pressed.
10. Allow to cool 5 minutes, then carefully invert onto a plate.
