This is an OLD recipe from Armour Star Lard handed down from my grandmother. My grandfather used to work for Armour. I substitute shortening for the lard! Ingredients:
1/2 cup sugar |
1 cup cake flour |
1/4 teaspoon salt |
1 teaspoon baking powder |
2 eggs |
1/2 cup milk |
1/4 cup lard, melted (i use shortening) |
3 tablespoons sugar |
1 teaspoon cinnamon |
4 tablespoons chopped pecans |
Directions:
1. Stir dry ingredients together. 2. Combine slightly beaten eggs and milk and add to dry ingredients. 3. Add melted shortening and stir until ingredients are well mixed. 4. Fill greased muffin tins 2/3 full of batter. 5. Combine topping ingredients and and sprinkle evenly over each cake. 6. Bake at 375* for 20-25 minutes. 7. For the Vegetarian option use Vegetable shortening. |
