Great as a main dish with naan or yummy side dish. Ingredients:
1 cup yellow split peas |
1 tbsp cumin seeds |
2 tsp coriander seeds |
2 tbsp olive oil |
2 onions, finely chopped |
4 cloves garlic, minced |
1 inch ginger, grated |
2 cups vegetable stock |
1 14 oz can diced tomatoes |
1 tbsp lemon juice |
1 tsp cayenne pepper |
1 tsp turmeric |
1/4 cup cilantro |
1/2 cup coconut milk (optional) |
Directions:
1. Toast seeds in hot dry skillet for 2 minutes. Grind 2. Bring peas to boil in pot of water (3 mins), then soak for 1 hour. Rinse. 3. Heat oil in skillet and gently saute onion, garlic and ginger for 3 minutes. 4. Put all ingredients in slow cooker and cook for 4-5 hours high or 8-10 low. 5. Stir in cilantro and coconut milk, if using. |
