Indian Vegetable Lentil Soup |

A very easy and tasy soup written down by my dd. Ingredients:
olive oil |
1 onion, chopped |
2 red chilies, deseeded and chopped |
2 garlic cloves, chopped |
2 tablespoons curry powder |
2 celery ribs |
4 potatoes |
1 sweet potato |
300 g chopped pumpkin |
100 g red lentils |
1 1/2 liters vegetable stock |
Directions:
1. Heat oil in large pot. 2. Saute onion, chilli, garlic and curry powder until softened. 3. Add vegetables and give a stir to coat. 4. Add stock and lentils. 5. Bring to boil. 6. Lower heat and simmer soup covered until vegetables are soft. 7. Blend and serve. |
