Ingredients:
16 ounce(s) can crushed tomatoes, undrained |
2 tablespoon(s) extra virgin olive oil |
1 whole(s) medium sweet onion, finely chopped |
1 whole(s) green chile pepper, seeded and finely chopped |
3 clove(s) garlic, crushed |
1 tablespoon(s) tomato paste |
4 cup(s) vegetable broth |
1/2 teaspoon(s) curry powder |
chopped cilantro for garnish |
Directions:
1. ) Heat oil in large saucepan over medium heat. Add the onion, chile pepper and garlic and cook for 4 minutes, or until soft. Stir in the tomatoes and cook, stirring often, for 5 minutes. 2) In a small bowl, blend the tomato paste with the vegetable broth and add to saucepan. Add curry powder and simmer for 7 minutes.
