A simple salad that features beautiful end-of-summer flavors: figs, arugula, and pecans glazed with a warm brown sugar vinaigrette. Ingredients:
4 c arugula |
12 figs, sliced in half |
1/4 c pecan halves, toasted |
3 t extra virgin olive oil |
3 t balsamic vinegar |
1 1/2 t brown sugar |
Directions:
1. Wash the arugula and place in a serving bowl. 2. In a small saucepan on the stove, whisk together the olive oil, vinegar, and brown sugar. 3. When the dressing is well combined and warm, pour it over the arugula. 4. Add the figs and pecans, then toss to combine. 5. Serve while the dressing is still warm. |
