Just posting this for nutritional info. Made it up. Ingredients:
1/2 head cauliflower, chopped into florets |
1/2 pint cherry tomatoes |
1/2 large red onion, chopped |
1 garlic clove, minced |
2 large carrots, peeled and cut into coins |
1 teaspoon olive oil |
1 tablespoon garam masala |
1/2 cup plain fat-free yogurt |
1 jalapeno pepper, chopped |
Directions:
1. Steam the cauliflower until fork-tender. 2. Meanwhile, warm the olive oil and fry the onion, garlic, and carrots until soft. 3. Add the tomatoes and cook until soft. 4. Add cauliflower and combine. 5. Add masala, yogurt, and pepper. Stir. |
