Indian-Spiced Stuff Eggplant |

Entree Ingredients:
1/2 cup brown rice |
1 1/4 cups water |
1 1/4 lbs eggplants |
3 tbsp olive oil |
2 1/2 cups chopped onion |
1 1/2 tsp salt |
2 tbsp minced garlic |
1 tbsp minced ginger root |
12 oz lean ground beef |
1 tbsp paprika |
1 tsp cumin |
1 tsp coriander |
1 tsp turmeric |
1 tsp garam masala |
1/2 tsp cayenne |
2 tbsp tomato paste |
Directions:
1. cook rice 40 mins. Cut eggplant in half, brush with 2 tbsp oil and bake cut side down in 400 oven for 15 minutes- turn and bake another 15-20 mins. Heat remaining oil and cook onion with 1/2 tsp salt for 3-5 mins until softened. Add garlic, ginger and cook 1 min. Add meat and spices and cook, stirring about 5 mins, then stir in paste and remove from heat. Remove most pulp from eggplants, chop, add to meat, along with rice, and season with S&P. stuff eggplants, bake at 350 for 20 mins, then serve. |
