From Main Course Salads by Donna Rodnitzky, c. 1999. Ingredients:
1/4 cup fresh lime juice |
1/4 cup chicken broth or 1/4 cup vegetable broth or 1/4 cup water |
2 teaspoons extra virgin olive oil |
2 teaspoons low sodium soy sauce |
1 teaspoon crushed red pepper flakes |
1 teaspoon ground cumin |
1/4 teaspoon salt |
Directions:
1. Place all of the ingredients in a jar with a tight-fitting lid, and shake until well blended. 2. Use the dressing immediately, or refrigerate until ready to use. |
