Prep: 3 minutes; Cook: 7 minutes. Black pepper, cardamom, and cinnamon are three spices commonly found in garam masala. Ingredients:
1 cup water |
1/2 cup dried fruit bits (such as sunmaid) |
2 teaspoons light butter |
1/4 teaspoon salt |
1/4 teaspoon freshly ground black pepper |
1/4 teaspoon ground turmeric |
dash of ground cardamom |
1/4 teaspoon ground cinnamon |
1/2 cup whole wheat or plain couscous, uncooked |
3 tablespoons thinly sliced green onions |
Directions:
1. Combine first 8 ingredients in a medium saucepan; bring to a boil over medium-high heat. Stir in couscous; return to a boil. Cover and reduce heat to low; simmer 2 minutes or until water is absorbed. 2. Remove from heat; add green onions. Cover and let stand 5 minutes. Fluff before serving. |
