Indian Saffron Rice With Lime |

Easy and exotic flavored rice dish. It pairs well with Tandoori style chicken or lamb in yogurt sauce. Note: this recipe uses converted rice. Ingredients:
1/4 cup butter |
2 cups converted rice (uncooked) |
1 tsp. jalapeno pepper, minced (add more if you like it very spicy) |
1 large lime, juice |
zest of above lime (zest it before you squeeze it) |
1 large can (46 oz.) chicken broth |
1 tsp. saffron threads |
1/2 tsp. ground cloves |
1/2 tsp. dry mustard |
1/2 tsp. ground coriander |
salt |
Directions:
1. In a large skillet, heat butter. 2. Add rice and stir until lightly browned. 3. Stir in the rest of the ingredients. 4. Simmer uncovered, stirring occasionally or 30 minutes or until all liquid is absorbed. 5. Season to taste with salt. 6. Serve...You can garnish it with lime slices and/or grated coconut. |
