Ingredients:
1 cup long-grain rice, uncooked |
1 teaspoon vegetable oil |
1/4 teaspoon salt |
1/4 teaspoon ground pepper |
1/4 teaspoon ground cumin |
1/8 teaspoon ground cinnamon |
1/8 teaspoon ground bay leaves |
1/8 teaspoon ground cloves |
1/2 cup raisins |
2 cups canned no-salt-added chicken broth |
Directions:
1. Cook rice in oil in a medium saucepan over medium-high heat, stirring constantly, 3 to 4 minutes or until golden. Add salt and next 5 ingredients; stir well. Cook, stirring constantly, 1 minute. 2. Add raisins and chicken broth; bring to a boil. Cover, reduce heat, and simmer 15 minutes or until rice is tender and liquid is absorbed. Let stand 10 minutes. |
