3 1/2 cups milk, divided |
1/2 cup yellow cornmeal |
2 eggs |
1/2 cup dark corn syrup |
1/4 cup dark molasses |
1 tsp salt |
3/4 tsp ground cinnamon |
3/4 tsp ground ginger |
2 tblsp butter or margarine, melted |
Directions:
1. Heat 3 of the cups of milk in the top of a double boiler. Mix the 1/2 2. cup of the milk with the cornmeal and stir into the warm milk. Cook over 3. gently boiling water for 30 mins stirring occasionally. Beat eggs 4. slightly in a 1 1/2 quart baking dish; add the syrup, molasses, salt, 5. spices and butter. Gradually stir into the hot cornmeal mixture. Place 6. dish in pan of hot water, and bake at 350 degrees F for 1 hr or until 7. firm in center. Makes 8 servings |
