This is a potato salad recipe that's enhanced by Indian ingredients. It goes well with traditional Indian food or with American food. I tasted a fabulous version of this in a restaurant in Houston and this is my attempt at emulating it. Read more . Hope you enjoy! Ingredients:
4 potatoes, skinned, boiled, drained, cubed |
2 cloves of garlic, minced |
1 onion, minced |
1-2 chilis (according to taste) minced, or chili powder |
1 t corriander |
1 t cumin |
2-3 tbsp oil (enough to coat your pan) |
3-4 tbsp mayo |
lemon juice to taste |
salt to taste |
cilantro to taste |
additional: if you have chaat masala or garam masala that's perfect to put into this as well |
Directions:
1. Heat oil 2. When the oil is hot, add the onions and garlic 3. Add the corriander, cumin, and chilis 4. Cook until the onions are transulcent 5. Mix the spices with the mayo; add cilantro, salt and lemon juice to taste 6. Spoon the mayo mixture into the potatoes a little at a time |
