This recipe is from a spa resort located in the Maldives, islands off the western coast of India. Ingredients:
1/4 teaspoon chili powder |
1/4 teaspoon ginger |
1/4 teaspoon garlic |
1/4 teaspoon green chili pepper |
1/2 teaspoon sugar |
2 tablespoons yogurt, plain |
1 teaspoon lemon juice |
1/4 teaspoon mint leaf |
1 lb cucumber, peeled |
2 cups yogurt |
4 garlic cloves |
1/4 teaspoon salt |
Directions:
1. Blend all the ingredients for the mint chutney until it becomes a smooth paste. 2. Blend all the ingredients for the yogurt soup and keep it chilled in a refrigerator. 3. To serve, transfer the yogurt soup into a chilled soup bowl. Garnish with mint chutney and fresh mint leaves. |
