This is a great south indian dish also called 'podimas' - it goes really well in a sandwich with lettuce or as a side dish with rice and a sour gravy... Ingredients:
1 kilo or 2.5 punds potatoes - pressure cooked |
some green chillies, cut fine |
1/2 inch ginger, cut fine |
mustard seeds |
salt to taste |
turmeric - 1/2 tsp |
oil for seasoning |
fresh corriander |
1/2 a lime |
Directions:
1. Heat the oil in a pan 2. add mustard seeds 3. when they crackle, add the chillies and ginger 4. add salt and turmeric 5. immediately add the potatoes [ peeled and mashed] 6. mash them some more, combining all the ingredients together 7. let it cook for about 5 minutes 8. squeeze half a lime [ or about 1 tsp of lemon juice] in it and mix 9. before serving, sprinkle freshly chopped corriander leaves over it 10. enjoy! |
